Hearts of Palm Salad

from Holly Clegg’s trim&TERRIFIC Gulf Coast Favorites An interesting grouping of hearts of palm, celery, cucumber, and feta with a splash of lemon presents a new light invigorating salad option.

 

 

 

 

 

 

 

 

 

Makes 4 (1/2-cup) servings

 

1 cup chopped hearts of palm

1/2 cup chopped celery

1 cup chopped cucumber, cored and peeled

2 tablespoons Nakano seasoned rice vinegar

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup crumbled reduced-fat feta cheese

 

1.  In large bowl, combine all ingredients, except feta, mix well.
2.  Toss with feta, serve.
