Glazed Brie

from The New Holly Clegg trim&TERRIFICâ„¢ Cookbook Time for a splurge with this recipe I just had to include. Serve with seasonable fruit to help justify this unbelievable experience. The nuts, brown sugar, and coffee liqueur make quite a topping. Remember to watch the size of your portions with ingredients like these.

 

   

 

 

 

 

 

 

 

Makes 20 servings 

 

1/4 cup pecans, chopped

1/4 cup coffee liqueur

3 tablespoons light brown sugar

1/2 teaspoon vanilla extract

1 (14-ounce) round Brie cheese

Assorted crackers

Assorted sliced fruit (apples, pears)

 

1. Preheat oven 325ºF.

2. In small saucepan, sauté pecans until golden brown, 3 minutes, stirring. Stir in liqueur, brown sugar, vanilla, cooking until brown sugar is melted; set aside. Watch carefully, as it cooks quickly. 3. Remove top rind of Brie. Place Brie in shallow baking dish. Top with pecan mixture.

4. Bake 8-10 minutes, or until Brie is soft and heated through. Serve immediately with assorted crackers and fruit slices.

Terrific Tidbit: Brie is a cream-colored, buttery-soft cheese that should be perfectly ripe for the best flavor—it oozes at the peak of ripeness. Brie from France is considered the best.
